Didier Chopin is the Cellar Master at Florence & Nardin. A job of great precision from the moment the grapes are harvested, he watches over the wines from each vineyard and each plot, soaking up their character. It is he who decides to vinify the greatest wines in old oak barrels, a practice that has become exceptional in Champagne: micro-oxygenation delicately reveals the complexity of the wines, giving them an extraordinary capacity for ageing. With patience and meticulousness, the Cellar Master orchestrates the work of the Tasting Committee, which tastes each of the wines to compose the year's blend. He completes the blend with the carefully preserved reserve wines, which provide him with an almost infinite palette of nuances and expressions. More than skill, the Chef de Caves must demonstrate a singular intuition: to foresee the evolution of the wines, so that today's blend becomes tomorrow's perfection.
